INSTRUCTIONS
Preheat the oven to 350°F.
Grease an 8-inch round cake pan with olive oil.
Soak the raisins in warm water for 10-15 minutes.
Add Zucchi’s Organic extra virgin olive oil and sugar to a large mixing bowl. Using a stand mixer, mix together the oil and sugar until thoroughly combined for about 2 minutes. Next, whisk in the eggs, one at a time. Add the vanilla extract and mix to combine.
In a separate bowl, whisk together the flour, cinnamon, ground ginger, baking powder, baking soda, and salt.
Gradually mix the dry ingredients into the wet, folding it in with a spatula. The mixture will feel somewhat thick and stiff.
Drain the raisins. Add raisins, apple, and lemon zest to the batter and fold together until all the raisins and apples are completely coated in the batter.
Spoon the mixture into the cake pan, leveling it out with a spatula.
Bake for 45 minutes or until an inserted skewer or knife comes out clean.
Cool on a wire rack and serve.
